Bâtonnage is the process by which forcefully stirring dead yeast after fermentation allows the wine to gain texture and flavor. We're a Barcelona-based boutique wine consultancy created by three wine geeks with diverse experiences in the wine world who want to stir things up to add texture and flavor to the wine experiences for our clients and their clients.

Our Consultancy advises restaurants on how to develop and update wine menus that pair with their unique gastronomic offerings and excite their guests. We also can train staff on how to explain the wines you offer and how to understands the preferences of your clients.

Our Events and Tastings offer unique and intimate experiences for wine lovers in Barcelona to gather, taste, and learn more about wine.

Bâtonnage Privé offers bespoke services to discerning clients who seek advice on how build or expand their wine collections, select the perfect wines for an important event, or would like help curating a visit to top producers in Catalunya. 

About our Team

Our team at Bâtonnage has diverse experience in the world of wine. Kieren is an experienced sommelier working in top restaurants from Priorat to London. Cyrus is a skilled investment advisor with a deep knowledge of the wine regions in Spain, France, and South Africa. Timothy has over a decade of experience in nightlife and events. He has knowledge of wineries across the globe from Napa Valley in the US to the Bekaa Valley in Lebanon. Between the three founders of Bâtonnage we speak; Arabic, Catalan, English, Italian, Luganda, Polish, and Spanish. All three have a level 3 certification from the Wine and Spirits Education Trust (WSET).
